Something in the mushrooms apparently wards off cognitive impairment in older people.<\/p>\n<p>Here are two of the articles:<\/p>\n<p>Science Daily: <a href=\"https:\/\/www.sciencedaily.com\/releases\/2019\/03\/190312103702.htm\">Eating mushrooms may reduce the risk of cognitive decline<\/a><\/p>\n<p>New York Times: <a href=\"https:\/\/www.nytimes.com\/2019\/03\/14\/well\/mind\/mushrooms-may-reduce-the-risk-of-memory-problems.html\">Mushrooms may reduce the risk of memory problems<\/a><\/p>\n<p>Of course you can eat them raw, but I don&#8217;t know of any better way to cook mushrooms than to stir-fry them. I&#8217;m pretty sure that I can stir-fry mushrooms in a hot wok with less oil than a skillet would need. They&#8217;re browned on the outside but succulent on the inside.<\/p>\n<p>These days, &#8220;baby bella&#8221; portabella mushrooms, as opposed to the white mushrooms, seem to be available just about everywhere, nice and fresh.
