Coarsely grate the squash (and some onion) in a box grater. Add egg, flour, and seasonings. Drop the mixture into a skillet with enough oil to cover the bottom of the skillet.

Hi, Jo: Excellent! I was thinking today of variations on squash fritters, and the idea of “squash puppies” occurred to me. But I was not the first to think of that, because I found lots of recipes on the web. Squash puppies will be next. They are, of course, a variation on hushpuppies, with with squash in the batter.
